Doorgesh has over 10 years’ experience in hospitality, having held positions in establishments which include Heritage, Telfair, Mugg & Bean among others. Doorgesh also worked on cruise-ships and was exposed to trends in gastronomy across various countries in Europe. Inspired by his culinary experiences in Mykonos Island, Greece, he embarked on the journey of revisiting the experiencing of dining at Great Delight.
He has been instrumental in franchising the manner the dishes on the menu are delicately cooked and served, to ensure consistency in quality at all times. Along with Chef Yu, Doorgesh created the signature Grilled Octopus, which is a flagship menu at Great Delight. Dishes such as the Seafood Platter, classic garlic butter with lime, offers a mouthwatering combination of fusion mix which is core to the philosophy of having a blend of flavours that represent the unique Mauritian ‘savoir faire’. Doorgesh promises to offer a skillfully crafted culinary experience that engages all the senses at Great Delight.
Niven Maroothen is considered one of the youngest tastemakers in fusion cuisine in Mauritius. Having started his career at a very young age, Chef Niven has been inspired by Chef Raja Shivadan and Chef Satay. Chef Niven has followed culinary courses while acquiring hands-on experience in various kitchens.
He stepped out into the world of fusion cuisine with the aim to make his mark through constant innovation. The evolution of Great Delight is his ode to the culinary legacy designed with Chef Yu and the founders.
Jean-Claude Cassadin is a polished professional with 46 years of experience in the hospitality industry notably at luxurious hotels Maritim and Sofitel. With proven ability to efficiently co-ordinate and manage fast-paced high volume restaurants, Jean-Claude has brought his skills to Great Delight. His vision is to create meeting spaces for people to bond and create happy memories while fostering positive customer relations.
Amiable and worldly, Jean-Claude Cassadin ensures customer satisfaction with all aspects of the restaurant and dining experiences are catered that live up to Great Delight Standards which is a truly holistic dining experience, from food, to the service and the ambience.
Chef Yu is amongst the best Chefs in Mauritius and the youngest Executive Chef in the country. She has been recently named Mauritius Country Chairperson of the Food Innovation Sector by WEF and elected as an Executive Board Member of the MCA. Chef Yu was awarded the Best Chef of Mauritius 2021-2022 by the Mauritius Business Awards and Golden Chef by Best of Gastronomy 2022, France.
For the past 11 years’, she has moved from being Chef de Partie to Sous Chef and now Executive Chef and Food Designer, holding an HND in Culinary Arts and Hospitality Management, EHSGD. Chef Yu is passionate about growing in the sector and is continually playful with taste, textures and products. Chef Yu is a specialist in fine dining and enthusiastic about the culinary world. Chef Yu is often cited in local and international media.
